Week 28’s 52 Weeks of Baking challenge was South American food. I decided to go with the savory food arepas. I looked a lot of recipes online but followed this one for arepa de Dominó. I didn’t have access to that delicious white cheese – I think it’s the same one used in Mexican queso dip – so I had to settle for shredded reduced fat Mexican cheese which was still quite excellent.
The arepas were time-consuming to make with the frying step (on both sides for 4-6 minutes each) then the baking step. I thought they were really tasty but I don’t see myself going through that amount of effort for them again.
I cut them open and made corn-flavored mini sandwiches with black beans sauteed with garlic and onion then cheese on top.
