  1. brooklyn vs. boston cream pie cupcakes

    For Week 34 of Reddit’s 52 Weeks of Baking Challenge we are supposed to carve a baked good. The moderator elaborated on this for us and cutting out a hole in a cupcake and filling it with cream definitely counts. I made this delicious recipe for Brooklyn vs. Boston Cream Pie Cupcakes from Vegan Cupcakes Take Over the World.

    These cupcakes require a monumental amount of effort. I stirred, chilled, whisked, beat, mixed, chilled again, baked, melted, and chilled a third time. It took hours and created a lot of dirty dishes. The cupcakes are pretty phenomenal though.

    Step 1: Baked Cupcakes

    Step 3: Filling the cupcakes with cream (making the cream counts for at least two steps and also involved two hours of chilling in the refrigerator)

    Step 4: Chocolate Ganache

    Bam! Look at that cupcake. It took so long to make I feel like it’s my biological child.

    Because I’m not vegan, if I was really craving something like this in the future I would probably go to the bakery and buy a single eclair. For vegans, however, cream-filled, chocolate-topped, baked treats are not so easily acquired so going through all this work every once in a while is worth it because these cupcakes are really awesome.

    Happy Cinco de Mayo!  I hear it’s kind of a fake holiday but I’ll accept any excuse for margaritas and Mexican food.

    Reddit’s 52 Weeks of Baking challenge for Week 18 is to transform a drink into a dessert.  I followed Isa Chandra Moskowitz’s recipe for Mucho Margarita Cupcakes from Vegan Cupcakes Take Over the World.  As always, her recipe is marvelous and led to fantastic cupcakes.  They contain a small amount of tequila and some fresh lime juice and zest.  They really do taste like a margarita! Refreshingly lime-y and tangy.

    I made just one recipe each of cupcake batter and frosting.  It yielded enough for 24 mini cupcakes and 6 regular-sized ones.  Check out a photo of the lime-i-licious frosting below.

    I decorated the larger cupcakes with a lime wedge.  Festive!  Don’t forget the guacamole and tacos.

  3. chai latte cupcakes with cinnamon frosting

    This week’s Reddit’s 52 Weeks of Baking Challenge is flower decoration.  I made these chai latte cupcakes I’ve been eyeing for a while.  I attempted some flower decorations on top using cinnamon vanilla buttercream frosting.

    I followed this recipe from the vegan cupcake bible, Vegan Cupcakes Take Over the World.  The author is a genius.  I never would have thought I could put tea in a cupcake!  I didn’t have any soy yogurt in the house so I used a 1/2 cup of unsweetened apple sauce instead and that seemed to work out just fine.  I followed this recipe for buttercream frosting that I’ve used before and added a 1/2 teaspoon cinnamon to the confectioner’s sugar to complement the spices in the cupcake.

    That’s supposed to be a rose, guys.

    These cupcakes taste wonderful.  I love the cinnamon frosting and I’m really picky about frosting.  If you like the spices in a chai latte, you’ll think these are a real treat.

    I decorated them this morning, ate one (for quality control purposes, of course), and brought the rest to poor Cute Husband and his coworkers who are stuck at work on a Saturday.  They rated the cupcakes two thumbs up!

    Look at me! I’m getting better at piping.  Still got a ways to go…

  4. vegan buttercream frosting

    This week’s Reddit’s 52 Weeks of Baking Challenge is to master the basic piping technique for decorating with frosting.  I definitely did no “mastering” but I did make some tasty vegan frosting.  My cupcakes are a tad on the homely side but I think I deserve an A for effort.  Right?

    I made the Sexy Low-Fat Vanilla Cupcakes from Vegan Cupcakes Take Over the World.  I must confess, I don’t think these taste very good.  Perhaps I used a gross soy yogurt?  I don’t know, but I will probably not bake these again considering there are definitively amazing baked goods to be made.  And eaten.  The frosting, however, is pretty delicious.  Here’s the recipe.


    1/4 c Earth Balance margarine, room temperature (the stick kind is best)
    1/2 tsp vanilla extract
    1 scant tbsp unsweetened soy milk
    1/4 tsp salt
    1 1/2 c confectioner’s sugar

    1. Beat the room temperature Earth Balance in a medium-sized bowl with a hand mixer.
    2. Add in the vanilla extract, soy milk, and salt.  Beat until mixed together.
    3.  Slowly add the confectioner’s sugar in batches.  Keep beating until it’s all mixed together.  Then beat some more until it’s nice and fluffy (about 4-5 minutes).

    I tried out the star decorating tip on those cupcakes.

    Our dear friends Contessa got married!  Congratulations!  We cannot wait for married double dates yesssss!

    We traveled (albeit not very far) to Clermont, FL to be a part of their wedding.  We’d never been to Clermont and found it to be quite hilly by Florida standards.

    Their ceremony was in a family friend’s lovely backyard on a lake.  They did a great job of decorating.  I loved all the candles.

    I made some vegan treats for their wonderfully decadent dessert buffet: Your Basic Chocolate Cupcakes with Rich Chocolate Ganache Topping from Vegan Cupcakes Take Over the World and Oatmeal Chocolate Chip Cookies adapted from Veganomicon.

    Awesome dessert buffet!  You can see my cupcakes at the top of the cupcake tower and one of the adorable flower girls snatching up a cookie.

  6. pumpkin chocolate chip cupcakes with cream cheese frosting

    Week 4 of Reddit’s 52 Weeks of Baking Challenge was frostings and/or fillings.  I confess I am not a big frosting fan.  The first thing I do with a cupcake or a piece of birthday cake is surgically separate the sugary, icky icing from the edible part of the treat.  Nevertheless, I wanted to try to make a tasty frosting.  I had great success with the chocolate ganache recipe in Vegan Cupcakes Take Over the World so I chose another from that book for this challenge: the cream cheese frosting.  Because I don’t have much of a taste for icing/frosting I didn’t know what to pair this with.  Pumpkin and cream cheese seem to go together so I went with the pumpkin chocolate chip cupcakes also from that cookbook.  I have made them several times before and they are fantastic.

    First step: Gather the ingredients.

     Ready to bake.

    The cream cheese frosting was tasty after all, the cupcakes were great, and the two together were pretty good.  The combination definitely grew on me but I’m still not sure.  Maybe it’s just too many different flavors with the chocolate chips in the mix?  Maybe I am just not a frosting person? Cute Husband took the bulk of them to work where they were happily eaten.
